Roasted Brussels & Bacon
This is my go-to holiday dish! Brussels sprouts have been given a bad rep and many people say they don’t like them. I always say you have to try them cooked in bacon before you can say you don’t like brussels. Not to much surprise they always end up loving them and wanting the recipe! Everything is better with bacon, am I right?

- 5 slices of bacon
- 1 lb brussels sprouts
- 1/2 Tbs balsamic vinegar
- sea salt & pepper
Place the strips of bacon in a baking dish then put in the oven at 425F. Bake for 20 minutes.
While bacon cooks prepare brussels by washing, cutting off the stem ends, and then slicing in half. If the brussels are large then consider cutting them into quarters.
Remove bacon from baking dish and set aside to cool, leave the grease in the baking dish. Add brussels to the baking dish with the bacon grease. Drizzle with balsamic vinegar, salt, pepper, and stir it all up so the bacon grease coats the brussels.
Cook in the oven for 25 minutes, stirring halfway through.
Once brussels are cooked, remove from oven. Roughly chop the cooked bacon and add it to the brussels.
Serve heated or at room temperature.
